For ages I have been wanting to find a perfect vegetarian “burger”. I have collected a pile of recipes, and I’ve tried a couple, but still hadn’t found one that made me want to run out to the kitchen and make more. Until this recipe.
VEGAN CHICKPEA BURGERS
(I have no idea where the original of this recipe came from, but I will change it a bit, anyway)
Ingredients:
1/4 cup rolled oats
1/8 cup sunflower seeds (I used squash seeds)
1 can chickpeas
1 medium carrot, peeled and chopped
1/2 cup parsley leaves (I used cilantro)
1 tablespoon tahini
1 tablespoon olive oil
2 cloves garlic, minced (I used 4)
1/4 teaspoon salt
1/8 teaspoon chill powder
1/8 tsp cumin (I used 1/2 tsp)
Method
Drain and rinse chickpeas and set aside. In a feed processor, combine oats and sunflower seeds, and blend until coarsely ground into crumbs. Chop carrot into small pieces and add to food processor, along with remaining ingredients.
Process until well combined, stopping to scrape down sides if necessary. Form mixture into 4 equal sized patties. In a skillet, pan fry patties for 3 – 5 minutes on each side, or until they’re lightly browed.
Serve with lettuce, tomato or anything else you can think of.
I made a quick salad of chopped tomato, avocado and onion to put on top, and added a big dab of mayonnaise.
Verdict
Delicious!! I served the “burger” on lightly toasted home made bread instead of a bun. The salad of tomato, avocado and onion was incredibly tasty as a topping. It was almost like eating falafel (which I love!).
The only thing i would change is to add more cumin next time, but I will definitely be keeping this recipe to use again.
