To the Beach! – Livingston, Guatemala

Enrique and I have just returned from the best vacation ever!! For the first time in many years, i dipped my feet in the Atlantic Ocean, only this time, it was the WARM tropical Atlantic, instead of the cold north Atlantic.

Livingston, Guatemala is located on the small piece of Guatemala that extends to the Atlantic Ocean (or actually the Bay of Amatique) just south of Peten. It is not connected by road to the rest of Guatemala, so to get there, you have to take a boat from either the town of Rio Dulce or Puerto Barrios. We decided to park and take one of the public ferry boats from Puerto Barrios … about a half hour pounding boat ride through the ocean surf.

The entire trip took us 7 hours from our door in El Remate to Hotel Flamingo in Livingston.

The first thing i did was to head out to the beach and walk into the ocean!

Pig Hygiene

Anybody who has ever had a pig (and a lot of people who haven’t) knows that one of their favourite activities (next to eating, and really, it is just another form of eating) is rooting in the dirt. Dancer LOVES to root in the dirt and spends lots of time investigating the entire property with his nose.

Meet Tiny Dancer

Meet TINY DANCER (Dancer for short). Just look at that healthy, solid little pink pig!!

He is not completely better, but is SO MUCH BETTER that he is like a different pig. He is alert and active and eats like a pig. He is paper trained. He is gradually growing used to touch (at first he ran from any kind of human attention, but now he loves to be pet or have his belly rubbed) but he HATES being picked up or dressed. I got a harness so i could start getting him used to coming with me, but it was too big so i’m going to have to get a smaller size. He screamed his head off when i tried to put it on him … his lungs are doing well!! And i can see where the phrase “scream like a stuck pig” comes from … what a noise they make when they want to complain!!   

Check out the difference after one week of healthy food, meds, bathing and oiled skin.

And his name? When he is happy / content, he dances. His two back feet just do a few quick dance steps … then a few more … and a few more … to show he is happy. (You should see him dance when he has food that he likes :-)) It makes me happy to see it. Tiny Dancer.

Tomatoes

Yesterday morning I picked these beauties from my garden! The two varieties of red ones are pretty normal … but I have never seen giant yellow tomatoes before and I have been looking forward to tasting them.

A Pig Rescue

I carried out a “pig rescue” today. Here he is .. the poor little creature. He is the 3rd little pig i have seen at that particular house, and the other two died within a week. I couldn’t let it happen to this one. He has internal and external parasites and is bloated but starved (just look at those rib bones showing through). I picked him up in a small yard … 110 degrees of dust with a little piece of metal for him to crawl under to get out of the sun. Q100 seemed a small price to pay to get him out of there … I figured that even if he died here, his last few days would be much better than over there.

My Garden Today

After about 5 years of experimenting and practicing, I think I’m finally figuring out how to grow vegetables in the jungle. I have been covering the soil with torn up paper and cardboard to protect it from the torrential rains and the beating sun. And watering regularly with the liquid from my worm farm which is an incredibly great fertilizer.

Garden: Ginger

Ginger is another plant that grows here without my intervention. It isn’t true “Accidental Gardening” (which is what i call the self-seeding of various edible plants in my garden, like verdolaga or cherry tomatoes) because i planted it intentionally after a piece of ginger i had bought to cook with had sprouted roots. I had enough for 4 different clumps of roots that were planted in pots for awhile, then moved over to a spot on our property.

I have never dug up the roots of ginger to use, and probably wouldn’t have thought to do it now, but I wanted to make a recipe for Sweet and Savory Asian Chicken Drumsticks that just wouldn’t wait, and I had run out of fresh ginger, which seemed like a critical ingredient. I was thinking of using dry … and browsing through some google articles about ginger when i remembered that i actually have some ginger plants growing in the back yard.

Recipe: Refrigerator Cucumber Salad

This recipe turned up synchronistically just at the time when i had harvested my cucumber crop and was wondering what i was going to do with them. It is called a salad, but it seems a lot like pickles to me, and I love pickles!! It seemed like a great way to memorialise the fruits of my labor.

The worship of Goddess Durga is very popular among Hindus. She is also called by many other names, such as Parvati, Ambika, and Kali in the form of Parvati. She is known as the divine spouse of Lord Shiva and is the mother of Her two sons, Ganesha and Karttikeya, and daughter Jyoti. There are many temples dedicated to Durga’s worship in India.”

I’ve been taking photos of my living room (they call it a salon, here, but in reality, it’s kind of a patio) to post as the next step in my House Tour, but every time i take photos, i see things that i want to repair, upgrade or organise before I post pictures of the space. Like my bronze Goddess Durga Statue. I found this piece about three lifetimes ago in a second hand shop in San Francisco, and fell in love with her. I have carried her around with me ever since. I don’t think I ever really cleaned her … and I can’t remember that she ever really needed it when we lived in Calgary … but she has definitely taken on a grungy look (above photo was taken after washing with mild soap and water, which did absolutely nothing to make it look better).

Wonderbag Cooking: Chicken Stew

My good friend Cheryl Woods from England recently sent this Wonderbag to the jungle for some of us to try. The idea behind this basic technology is to heat the food to boiling, then seal it in this polystyrene-bead filled bag that holds in the heat while the food cooks itself.

Garden: Lemons

We have three different types of lemons in our yard … limón real, which is a local variety that are as large as large grapefruits and contain about a gallon of juice, export lemons, which are the size of lemons you find in north american grocery stores, and this variety, which is the most common around here, and are small and prolific with an excellent lemonade-quality juice.

Nature: Frogs

There are frogs everywhere lately … particularly at night. This large almost albino specimen lives really close to my back door and every night, as soon as Walker has finished his dinner, he jumps right into his bowl and hops up and down (rattling the bowl on the stone patio with each jump) while he licks out the bowl.

Recipe: Tuna Noodle Casserole

Today I am using a new recipe plug-in for the first time … so when you want to print one of the recipes that you see on the blog, it is now super easy to get only the recipe and not all the surrounding stuff. Or you can print the recipe with pictures or without. I’m not sure if my first attempt is going to work since i am still learning the plug-in … but bear with me and I will eventually perfect it.

I’ve been using the same tuna pasta casserole recipe for many years, one that uses an elbow macaroni and canned soup (although i have been making my own cream of chicken soup, instead of the canned) (usually), so when i ran across this recipe the other day, it called out to me that it was time for a change. Not a HUGE change, mind you … but a change, none the less, and fortunately, it was a change for the better!
